Bikini

Yields 10 servings

To make the Clementine Syrup (yields 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar

Ingredients for the Cocktail (makes 850ml, enough for 10)

400ml decent vodka
100ml London dry gin
150ml peach schnapps
200ml citrus syrup (see above)
Fresh cranberries, as a garnish
Mandarin essential oil, for finishing

Method

To prepare the Syrup: Put all the ingredients in a pot, heat until it reaches a simmer, mixing so the sugar melts. Next, remove from the burner and let it to cool down fully. Transfer into an sealable bottle, close it and store in the refrigerator, it can be stored for around one month.

Preparing the Premix: Combine every spirits and syrup into a big jug, leave to sit for 60 minutes, then filter it best through cheesecloth, so it's completely strained.

When ready to serve: Measure 85ml of the batch mix into a stirring glass containing ice, and agitate gently for about 60 seconds to cool it down. Strain into a chilled martini glass or similar, garnish with a few cranberries and finish with a light spray with the mandarin essence over the drink.
